    I use peanut oil for my confit. Around Thanksgiving they have them for sale in 5 gallon for the turkey fryer peeps.

    I saved snow goose legs and was very pleased with their flavor. The leg meat on a snow goose is like a chicken leg. Tender with a mild flavor.

    Interesting, grape seed confit. I’ve seen many different oils used for confit, usually butter or animal fat(obviously). I bet it’s still delicious, the only reason the French used animal fat and butter is because that’s all they had.
