    I am convinced I was the first one ever to mention making kimchi with kohlrabi on the entire internet, and now I see it popping up here and there, and its ok but they couldve at least named the type of kimchi after me or something…

    It’s funny that you chose kohlrabi for this, because kohlrabi and cabbage are actually just different varietals of the same plant. Brassica oleracea is the all star of the vegetable section. Cabbage, broccoli, cauliflower, kale, mustard greens, kohlrabi, and others are all just varietals of Brassica oleracea

    Kohlrabi kimchi is as good as raddish kimchi. They are both great ingredients to be pickled too. Yum!

    kohlrabi is one of my favourite vegetables (we have mainly the white roots here in germany), even raw the crunch and taste are impeccable, i love them. Never tried them as main kimchi ingredient.
    Also i always had a hard time translating them to english, glad to know yall use that name down under there too, because "white beet" is just too broad of a term to describe them.
